I run with an Apple Watch and kept hitting the same wall: it has great GPS and heart rate, but following a route, running an interval session or pacing a race was where the built-in Workout app and other apps fell short for me. What it does: Routes with turn-by-turn. Import a GPX file or draw a route on the iPhone. The Watch shows the line on a map and tells you every turn about 60 m before it, with a tap on the wrist and a voice cue in your AirPods. Works offline, no phone needed. Race pacing.
